Creamy Cucumber Salad Recipe

Ingredients:

  • 1 English cucumber

  • 1 small white onion

  • 3 heaping tablespoons sour cream

  • 4 tablespoons white vinegar

  • 2 tablespoons sugar

  • Salt and pepper to taste

  • 2 tablespoons dried parsley

  • Dried immortelle blossoms or dried rosemary needles for garnish

Instructions:

  1. Wash the cucumber and dry with a paper towel. Using a mandoline, slice the cucumber into 0.3 cm (⅛ inch) thick slices.

  2. Place the cucumber slices in a bowl and add plenty of salt. Let sit for 30 minutes to draw out excess moisture.

  3. Drain the released liquid and wash the cucumber thoroughly to remove excess salt. Pat dry with a clean towel.

  4. Cut the small onion into small cubes.

  5. In a small bowl, prepare the dressing by mixing the sour cream, white vinegar, sugar, and salt and pepper to taste.
