Today, I am sharing something different: a chilled grape consommé, ideal for hot summer days when you crave something light, refreshing, and elegant. This consommé is served cold, making it the perfect starter for al fresco dining, garden parties, or any summer gathering.

The Story Behind Grape Consommé

Consommé is a classic French culinary preparation—a clear, flavorful broth that has been clarified to remove impurities. Traditionally made with meat or vegetables, consommé is prized for its elegance and clarity. This grape consommé reimagines the classic technique using fresh grapes, honey, and a carefully balanced blend of wines.

The addition of lavender essential oil is inspired by the traditional pairing of lavender with sweet fruits and honey. The floral, slightly herbaceous notes of lavender complement the sweetness of the grapes and honey, adding a layer of aromatic complexity that elevates this simple consommé into something truly special.

In culinary applications, lavender adds a delicate, floral, slightly sweet note to both sweet and savory dishes. It pairs beautifully with berries, citrus, honey, and—as this consommé demonstrates—grapes.

Grape Consommé Recipe

Ingredients:

  • 80 red grapes + 80 white grapes

  • 300 mL (10.1 fl oz) red wine

  • 300 mL (10.1 fl oz) white wine

  • 300 mL (10.1 fl oz) sherry cooking wine

  • 400 mL (13.5 fl oz) water

  • 8–10 tbsp honey

  • 1 envelope gelatin (10 g / 0.35 oz)

  • 35–40 drops Dr. Hermann's Syrup-Based Oil of Lavender

  • Fresh lavender twig or dried lavender blossoms for garnish

Instructions:

  1. Wash the grapes in a strainer and let excess water drip off.

  2. In a large pot, combine the red wine, white wine, sherry, and water. Add the grapes and cook on low to medium heat for 5–6 minutes until soft.

  3. Remove the grapes from the broth and let them cool.

  4. Add 8–10 tablespoons of honey to the hot cooking broth, mix well, and let cool.

  5. Sprinkle 1 envelope of gelatin over 250 mL (1 cup) of the cold cooking broth. Let it sit for 5–10 minutes to bloom.

  6. Add the gelatin mixture to the entire cooking broth and bring to a boil. Let cool at room temperature, then transfer to the refrigerator until slightly thickened.

  7. For each serving, scoop 260 mL (9 fl oz) of the chilled cooking broth into a soup bowl.

  8. Add 35–40 drops of lavender oil and mix well.

  9. Add the cooked grapes to each bowl (16 red and 16 white per serving).

  10. Garnish with a twig of fresh lavender or a few dried lavender blossoms.

Tips for the Perfect Grape Consommé

Use a variety of grapes: The combination of red and white grapes adds visual appeal and a more complex flavor profile. Choose sweet, ripe grapes for the best results.

Don't overcook the grapes: They only need 5–6 minutes to soften. Overcooking can make them mushy and release too much pectin, which can affect the clarity of the consommé.

Taste as you go: Adjust the honey and lavender to your preference. The lavender should be present but not overwhelming—start with the recommended amount and add more if desired.

Make ahead: This consommé tastes even better the next day as the flavors continue to meld. It can be prepared up to 24 hours in advance.

Serve well chilled: The consommé is best served very cold, directly from the refrigerator.
